Evelyn was born on April 3, 1930, to Laura and Henry Hardan of Burton, Texas. Evelyn married Vernon Plueckhahn on September 14, 1947, at Zionsville Lutheran Church, Brenham, TX by Rev. Richard Weber. Evelyn was a loving wife and mother to daughters Doris, Nancy and Marla Jo. Evelyn was a homemaker and had various jobs while Vernon served in the Armed Forces during WWII.

Evelyn had a love for flowers and originally began a business making flowers from a form of plastic and turning them into bouquets. Evelyn's most significant job was when she and Vernon decided to open and operate a small café in Carmine, The Spur. Evelyn was known for her fried chicken, chicken fried steak and "real" French fried potatoes. The café was well known and was visited by people from several surrounding areas, and they were happy to wait for a home cooked meal. Following the sale of the café, Evelyn and Vernon had a poultry farm known for its egg production in Carmine, TX where they continued to be surrounded by family and friends. Following their retirement Evelyn and Vernon moved to Hot Springs Village, AR before eventually returning to Brenham, TX. They then resided at Kruse Village. In Evelyn's later years, she was very active and had many friends at Kruse Village where she participated in bunko and bingo. Evelyn continued to express her love for flowers, which was seen by her beautiful yard and flower beds.

Evelyn was preceded in death by her parents, husband, Vernon (2012) and daughter, Marla Jo (1970). She is survived by daughters Doris Redman and husband Michael of Brenham, TX, Nancy Barnette and husband Bob Erke of Story, AR; grandchildren Justin Redman and wife Brandie of Brenham, TX, Casey Redman and wife Lisa of Brenham, TX, and Stacy Herzog of Hot Springs, AR; great-grandchildren Savannah Redman, Ava Redman, Emily Redman and Alex Redman.

Pallbearers will be Justin Redman, Casey Redman, Gary Marburger, Clint Marburger, Gary Wagner, Jack Schramm and honorary pallbearers; her many friends at Kruse Village.
